Learn to Preserve: Italian Classics

Are you ready to embrace your inner Nonna and learn the age-old tradition of preserving the bounty of each season? Join me for a hands-on workshop where you'll learn how to take fresh, vibrant ingredients and turn them into delicious pickles and preserves that capture the true taste of Italy.

Italians have mastered the art of resourcefulness in the kitchen, ensuring nothing goes to waste and pantries are filled with flavour to last. Come and learn these time-honoured techniques and bring a taste of Italy to your own kitchen!

In this hands on workshop, you will make:

  • "Peperoni sott'aceto" (Roasted Capsicums in Vinegar)

  • "Giardiniera" (Pickled Mixed Vegetables)

  • "Chinotto" (Spiced Orange Syrup)

  • "Olio al peperoncino" (Italian Style Chilli Oil)

You will prepare all the above items yourself or in groups and take everything you make home.

Time permitting, I'll also demonstrate how to make fresh ricotta from scratch, a beautiful fresh Italian cheese that you will enjoy with lunch.

In addition to making the above goodies, you will also be shown how to water-bath your goods for long term shelf storage - please note, you will need to do this at home after the workshop as they are unable to be disturbed in order to seal properly.

  • Make and take home your own Italian style pickles and preserves

  • Recipe cards for everything you make, including instructions on how to finish, store and serve your goods

  • All equipment provided, including food grade jars for your goodies and a tote bag to take everything home in

  • Aprons to wear in class

  • PLUS taste tests of all the above and a delicious lunch spread of Italian antipasto to enjoy after all your hard work is done!
